As winter ends and days grow longer, you feel a stir of joy. Spring is near, and you plan a garden with fresh vegetables for your kitchen. In this time, try these five plants to boost your growing season.

1. Garlic

Garlic fills kitchens with flavor and helps keep you well. Many plant it in fall, yet some kinds work in early spring. Plant one clove at a time with its tip up. Place clove to clove about six inches apart. If the earth stays too cold or wet, sow them in a small pot first. Later, move the young plants outside. Keep the soil clear of weeds. Garlic roots stay near the top.

2. Fava Beans

Fava beans, also known as broad beans, stand firm in cool weather. They suit early planting. If your soil feels soft, bury seeds about two inches deep in soil that drains well. Plant seeds in two rows. Leave open space between rows so you can pull weeds as needed. Fava beans may grow tall, so tie them to a stake or rope to help them stand strong.

3. Onions

Onions grown from seed tend not to bolt as much as those from sets. Begin your seeds inside with a light mix of soil. As the seeds sprout, move them to a small greenhouse. When the sprouts grow strong, shift them to small trays. In mid-spring, plant them outside, spacing them six to eight inches apart. Always use fresh seeds and check your supply before you sow.

4. Salad Greens (Lettuce, Spinach, and Pea Shoots)

Cool weather makes it easier to grow salad greens. You may start them indoors with a light or sow them directly in small pots filled with mix. When true leaves appear on the seedling, give each plant more room. Then, move them outside or into a covered space to keep them warm. Soon you will enjoy fresh, crisp greens in your salads.

5. Tomatoes

Tomatoes are a summer favorite, yet you can start them inside now. Plant the seeds one finger-width apart and keep them warm under a gentle heat source or a clear cover. When the small plants appear, move each one to its own pot. Once the risk of frost is over, transfer the young tomatoes to a greenhouse, cold frame, or your garden. Let them adjust slowly to the fresh air and light.

You might also try radishes, early cabbage and cauliflower, or herbs like parsley. These plants can add to your early harvest.
